Hay on Wye cheese comes from a small producer near the Welsh border, known for crafting cheeses with traditional methods. This cheese is a semi-hard variety made from cow’s milk, offering a balance between creamy texture and a firm bite.


The cheese’s flavor profile is well, cheesy. It combines nutty undertones with a subtle sweetness, followed by a mild tang that lingers pleasantly. It goes very well with a caramlised onion chutney.




This cheese pairs beautifully with crisp apples or pears, enhancing its natural sweetness. It also complements crusty bread and a drizzle of honey for a simple but satisfying snack. For drink pairings, a light red wine or a fruity cider works well to balance the cheese’s richness.
